Bagel Breakfast Casserole Recipe

This bagel breakfast casserole is a delicious and unique way to use up leftover bagels.

The eggs and bacon make it a hearty and satisfying breakfast or brunch dish, while the bagels add a deliciously chewy texture. Serve it with fresh fruit and coffee for a complete meal.

 

- Ingredients

  • 4 plain bagels, sliced
  • 8 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked and crumbled bacon
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped

- Directions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with cooking spray.
  3. Arrange the sliced bagels in the bottom of the baking dish.
  4. In a large bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, salt, and black pepper.
  5. Pour the egg mixture over the bagels, making sure to coat them well.
  6. Sprinkle the crumbled bacon, shredded cheddar cheese, and chopped green onions over the top of the bagels.
  7. Bake the casserole for 35-40 minutes, or until the eggs are set and the cheese is melted and golden brown.
  8. Let the casserole cool for a few minutes before slicing and serving.
